Initially founded by Guy Bouvet, grandfather of Antoine, the Bouvet estate is rich with old mass vine selections with roots that dive deep into the chalky soils. Taking over in 2011 Antoine has focused on moving towards minimal intervention methods. The vineyard has ceased its use of pesticides and weedkillers, encouraging a more flourishing biodiversity on the plots. In 2015 they began integrating biodynamic and organic practices which leads to spontaneous fermentation in the cellars. The wine is aged for 8 months in french oak barrels and for a minimum 36 months on lees giving it its unique robust color. Although Antoine is a fresher face in the wine world he is unafraid to experiment in the cellars and create newer additions to the Bouvet collections.
On the nose this wine offers fresh red berries and light florals. On the palate it delivers a crisp and structured sparkling with a base note minerality leading to a long finish. Pairs exceptionally well with seafood dishes, mushroom and bleu cheese.
