A notably light and vegetal take on aejo. Look for a pale straw hue and mild, peppery aromas, plus a flinty hint. The palate mixes sweetness and pleasing salinity: salted almonds winds into bell pepper, asparagus and fresh herbs. Salted vanilla sweetness takes over into the warming finish. Aged one year in ex-American whiskey barrels.
