“Bill Phil is named after the founders great-grandfather William Philip OConnell, a blacksmith from County Limerick. He was renowned for his hand-crafted turf-cutter known eponymously as the Bill Phil Slen (pronounced shlawn). This whiskey is a throwback to traditional Irish whiskey from the days before coal came to Ireland. Its sweet & smoky, with rich biscuit malt and citrus fruit flavors. Luxurious.”

With decades of experience in food & beverage across three continents, Daiths love of Ireland and whiskey brought him back to County Waterford and our headquarters in Kilmacthomas.
