Tasting Profile

Sense Notes Colour / Appearance Rich mahogany gold with copper highlights. Very deep, lustrous hue consistent with long maturation and sherry cask finishing. Nose / Aroma Bold and layered. Initial aromas: Seville orange marmalade, creamy caramel, Manuka honey; plus lemon drizzle cake. Then notes of freshly baked banana bread, sweet pineapple, caramelised pear, sun-kissed raisins, Ogen melon, sweet sultanas. Taste / Palate Rich and indulgent. Maple syrup, bitter chocolate, Pontefract cake, sweet sultanas. Cara Cara orange, crushed almonds, vanilla custard. Dessert-like features (Napoleon cake etc.). Deep fruit & sherried richness. Finish Long, decadent, with creme brle, toffee apple, cape gooseberries, then aftertaste of aged balsamic, espresso coffee, ginger. Warm spice lingers, sweetness remains balanced with some oak and sherry dryness.
