The start of the newest, Patrons Projects series (44), Northern Spirits, see’s them collaborate with the best cocktail bars in the North, to bring you beers inspired by signature and classic cocktails. This is Philadelphia Fish House 5.5% IPA.

The key ingredient, other than rum, is peach. Lots of peach. Other components of the cocktail include lemon zest, added in the brewhouse for an underlying zing, and tea, for some tannic dryness, for which we can rely on just a touch of tannic hop bite from the dry hop. With added peach puree, peach oil-infused hop oils and our Luminosa hop, for layers of summery peach character.
