Villa Canestrari is a true artisan winery. Soav is named after a town just out of Verona, and we just felt this wine was so special that when in Italy we went back to meet the Villa Canestrari folks 3 times just to confirm our order!
Soav is made from garganega, an Italian white grape widely grown in the Veneto region in Northern Italy. The harvesting starts around mid-September and ends in October; two passes through the vineyards and careful grape selection ensures perfect ripening. The grapes are then left to dry for two months to intensify the flavour. The wine matures for one year in lightly toasted barrels, thus encouraging malolactic fermentation. The oak is perfectly balanced, not overwhelming the wine, just adding texture and complexity. Bottling is followed by extended cellaring before release. This is one that can last well in the cellar and develop beautifully.
This wine when poured is a golden straw colour, itsaroma abounds with exotic fruit andgorgeous spicy, nutty notes. The palate has just a hint of vanilla with quite intense stone fruit, andtraces of banana and pineapple. Its superbbalance isa credit to their masterly vinification. We matched this with Barramundi fillet with crispy skin (click for recipe)and these two together are like Tubs and Crocket from Miami Vice, a great team for a summer day!
