He was renowned for his hand-crafted turf-cutter known eponymously as the Bill Phil Slen (pronounced shlawn). This whiskey is a throwback to traditional Irish whiskey from the days before coal came to Ireland. Its sweet & smoky, with rich biscuit malt and citrus fruit flavors..
Aroma: Bergamot oil scented light peated smoke fills the senses. Distinctively fresh vibrant notes of cereal slowly emerge, carrying waves of poached pear, earl grey tea as the phenolic oils dissipate.
Taste: Clarified butter over crumbled biscuit with clean waves of lightly smoked malt, banana bread, sweet cassia & bergamot.
