100% Riesling. Although Willi Schaeferis not well-known for their dry Rieslings, theyare happy tomake them when they have the grapes and the right conditions are met. The fruit comes from Willi Schaefer’s Graacher vineyards in Mosel, Germany.

Grape Varietals & Region: 100% Riesling predominantly from the Himmelreich but from different parcels than its dry counterpart.

Feinherb is not a recognised style, but it’s the perfect word to describe this dry to off dry style Riesling.Schaefer’s fine-dry Graacher Riesling fine-dry is hardly sweeter than the dry version, but is significantly fruitier

Taste Profile:Astonishing finesse and slatey intensity for a village wine.Bright and refined on the fresh and pure nose that reveals white peach aromas intertwined with discreetly flinty slate aromas. Round and lush on the palate, this is a quite intense and textured Graacher with ripe, elegant acidity, yet it (still?) doesn’t have the sharpness and precision of the dry Graacher. The finish is mouth-filling and fruity, though, and delicate in acidity, with good length

Winemaking Process: The grapes are hand-harvested, gently pressed whole cluster, and spontaneously ferment and age in large old Fuder barrels.
