With almost 2,000 years of history, Nikolaihof is the oldest winery in Austria and one of the first in the world to have begun working by biodynamic principles according to the regulations of the Demeter Association. In 1894 the Saahs family took over the estate and carried on the traditions the monks had established here. Integrated farming continued, and even as winemaking and grape growing took a larger role at Nikolaihof in the 1960s, chemicals were never used in farming. Nikolaihof has been practicing Bio-dynamics since 1971, making them one of the longest Bio-dynamic practicing wineries in the world. Nikolaihof became Demeter certified Biodynamic in 1998. Annual bottle production of 95 000 bottles.

Vom Stein is a sub-site of the Silberbichel vineyard and is a slight incline, sloping east. Nikolaihof makes beautiful wines from this vineyard. Smaragd is the highest level of quality in Austrian wines.
Taste Profile:The Riesling Smaragd Vom Stein unfolds an enticing spectrum of scents. Aromas of yellow fruits such as apricot and mirabelle plum meet lemon peel and the nuance of lily of the valley oil. This fragrance is characterised by a breathtaking freshness, coupled with an intense minerality and a cool sophistication. Its minerality presents itself strikingly and is underpinned by a fine tannin. Its long finish, marked by intense fruit, is unsurpassed. A mature wine that combines expression and intensity.
Winemaking Process:With respect for nature, this wine is made solely by fermentation with the natural yeast found in the grapes. Additives such as sugar, enzymes and flavour enhancers have no place in this process. After a careful storage of two and a half years in large, old wooden barrels, the wine is finally bottled on a fruit day.
