The Toro Albal winery began in the heart of Southern Cordoba in 1922, which is famous for its wine region Montilla-Moriles. Their history begins with the story of a small wine grower Jos Mara Toro Albal who had the great idea of keeping aged wines to create wine treasures destined for the most demanding palates and whose family values are still founded on this philosophy today.

Toro Albal wines are now to be found on the best tables in the world. Toro Albala winery has received awards in recognition of its constancy in the world of viticulture. Patience bears sweet fruit, something which winemaker and enologist Antonio Snchez knows well, having dedicated all his life to this and for whom the Pedro Ximnez grapes are as if they were his own offspring, grown under the best conditions to ensure sufficient character and to be a part of the most wonderful dinner gatherings.

Grape Varietals & Region: 100% Pedro Ximenez from Montilla Moriles, Spain.

This wine proceeds from one of the first grape harvests led by Antonio Snchez in Toro Albal. In this year, old amontillado butts were first utilized for Pedro Ximnez ageing. An authentic gem awarded with 97 Robert Parker points and Best Sherry Mundus Vini 2015.

Taste Profile: Black mahogany tonality with copper reflections. Slow movement in glass. Medium-high intensity. Notes of raisining (dates, dried figs and raisins), subtle citric aroma, candied fruit, and highlighted aromas from the long oxidative process in the American oak which adds smoked, spicy and toasted touches, and background memories of liquorice that gives freshness on nose. Sweet and dense entry into the mouth. Balance and elegant bitter finish. Its a round wine, with no rough edges and lingering finish.

Winemaking Process: A dense and elegant wine, produced from the asoleo process of Pedro Ximnez grapes to obtain a great richness in sugars. After the press, it was left to rest. Some time later, it was stored in American oak butts for a long oxidative period of ageing. This wine proceeds from the Aguilar de la Frontera winerys ageing butts reserved by Jos Mara Toro Albal, who stored a quantity of wine for a prolonged oxidative ageing in years of extraordinary conditions.
