Grape Varietals & Region:100% Pinot Noir from the Windansea single vineyard site in Upper Hemel-En-Aarde Valley, South Africa. A duplex soil with topsoil to about 35cm deep that has coarsefragments and only 5% clay. The subsoil consists of material indifferent stages of weathering. 30% fine gravel and 20% coarse gravelwith varying clay percentages followed by dense clay at about 70cmdeep.
Taste Profile:A lavish wine with dense fruit, soft spice and violets in cooler years. The lush black and redfruits merge to a savoury core, strewn with mineral characters and freshly turned earth. Thefirm framework and granular tannins are rooted in the clay soil, lengthened by fine, sinewytannins in the finish.
Winemaking Process:The fruit is partially whole cluster & partially destemmed, fermented without crushing, undergoing spontaneous fermentation fermentation. The wine is left on skins for 25 days, and undergoes malolactic fermentation. Following which, it is matured in barrel on it’s lees for 11 months, before another 5 months of maturation in large oak barrels
