In 1919, Charles Mimeur acquired the historic vineyards, and the family continues to manage the estate until today. Today, the winery is run by Nathalie Bernard and Sbastien Fossier, who continue to evolve the estate in a family spirit, focusing on quality excellence both in the vineyards & in the cellar, with a strong ecological awareness
Grape Varietals & Region:100% Chardonnay from Burgundy, France. This is a Village wine from Chassagne-Montrachet, coming from an exceptional location 15 metres from the Grand Crus. The vines are grown on clay-limestone soils.
Taste Profile:A yellow color with golden highlights. A nose of great nobility, combining woody, pastry and roasted notes. On the palate, an ample, creamy structure reveals charismatic aromas, all carried by a taut, alert structure.
Winemaking Process: Hand-picked grapes only, in crates of up to 30 kg. The whole bunches are pressed in a pneumatic press. The grape juice is then cold-settled before being gravity-filled within 24 hours. Alcoholic fermentation takes place entirely in barrels, using indigenous yeasts. The wine ages for 10 months in French oak, of which 20% are new. Regular stirring of the lees.
