Paolo Vodopivec owns this organically and biodynamically farmed Carso estate, on the border with Slovenia, just north of Trieste. Vodopivec works solely with the Vitovska grape and inspired by the wines of Gravner, using amphorae to age many of his wines. In contact with the skins for 6 months, and then matured for 24 months in large 3000L Slavonian oak barrels, this wine is yellow gold in colour, and is teeming with apricot skin, pear skin, ash, along a tightly grippy palate. The finish lingers with chalk and limestone. This striking wine will age beautifully.
