A sweet wine, blend of three white grape varieties from the Northern Rhne: Roussanne, Viognier and Marsanne. Manual harvesting with several successive sortings of overripe, raisined or botrytized grapes, from mid-October to mid-November. Alcoholic fermentation and aging in barrels with indigenous yeasts. Stopping fermentation by cold crashing. 8 months aging in barrels. Nose with notes of quince, pear and acacia honey. Harmonious and round mouth. Unctuous and rich sugars in the middle of the mouth, and a tangy, balanced mineral finish. Perfect with terrine-type foie gras or blue-veined cheeses such as Roquefort. 50cl bottles
