Culture de la vigne:
Thinning out of leaves and green harvesting. The Syrah grappes are picked bunch by bunch at the end of the harvest.
Vinification:
De-stemming. Skin contact (5C) during 3 to 4 days. Pushing down of the cap 4 times per days. Fermentation at 25C during 2O days. Blending of the free-run and press-wine with malolactic fermentation in new small oak casks.
Bottling:
Single. Bottles laid down after remaining upright during 24 hours.
Tasting:
Deep-ruby-red colour. Complex nose with blackcurrant liqueur, mulberry jam odours… The mouth is sheer velvet with animal notes, of leather…

Feathered game, wild boar stew, creamy goat’s cheese…
