Pinot Blanc grapes were obtained from the limestone, southwestern slope (155 m above sea level) of the Dobra plot, near Kazimierz Dolny. Fermentation and then eight-month maturation on yeast lees in a concrete egg. This concrete allows the wine to mature at a stable temperature. The porosity of the material provides the wine with a minimal but necessary dose of oxygen. After all, the non-accidental shape, especially during fermentation, helps the wine to be saturated with mannoproteins, i.e. aromatic compounds responsible for the bouquet. And yes, this Pinot Blanc seduces with white currant, subtle apricot and a hint of flowers.
