The Toro Albal winery began in the heart of Southern Cordoba in 1922, which is famous for its wine region Montilla-Moriles. Their history begins with the story of a small wine grower Jos Mara Toro Albal who had the great idea of keeping aged wines to create wine treasures destined for the most demanding palates and whose family values are still founded on this philosophy today.
Toro Albal wines are now to be found on the best tables in the world. Toro Albala winery has received awards in recognition of its constancy in the world of viticulture. Patience bears sweet fruit, something which winemaker and enologist Antonio Snchez knows well, having dedicated all his life to this and for whom the Pedro Ximnez grapes are as if they were his own offspring, grown under the best conditions to ensure sufficient character and to be a part of the most wonderful dinner gatherings.
Grape variety and region: 100%Pedro Ximnez. Bodegas Toro Albal creates wines with 30% of grapes from their own vineyards and 70% coming from partner growers in Montilla-Moriles.
Taste profile: Marques de Poley Palo Cortado has a suggestion of sweetness and a velvety texture. Amber colour with copper reflections. The noble and elegant nose is filled with aromas of sweet caramel, tobacco spice, roasted nuts and candied orange peel. Dry and voluminous entry to the intense palate, whichseems to reminisce overits time spent in old wood barrels. Nice flavours of raisins, tobacco and warm woody notes mingle with orange peel and hazelnuts.
Winemaking process: The wine goes through a long and traditional ageing process in a “crianza” system, loses the veil of flor early on and starts the oxidative ageing. It stays in this peculiar ageing for around 25 years.
Food pairing: roasted lamb, spiced partridge, hare civet and wellroasted game. It can also be tasted with appetizers, foie, puff pastry and assorted hams.
