Grape Varietals & Region:A blend of Viognier & Sauvignon Blanc from Tuscany, Italy. The name derives from a farm whose owners provided shelter for ageing priests who were no longer able to work in their parishes, a sort of convent. Later the name took on the meaning of “hill of wind”.

Taste Profile: Aromatic and fruity nose, acacia, gooseberry, grapefruit, wild fennel and thyme, intense marine mineral trail. On the palate its fresh and creamy.

Winemaking Process:Fermented & aged in steel casks
