Winemaking Process:It undergoes spontaneous fermentation with indigenous yeasts in open-top barrels, with minimal use of sulphur. The crushed and destemmed grapes ferment and age in the same barrels, completing both alcoholic and malolactic fermentation. A further 6 months of ageing on the skins follows in the barrel, after which the wine is bottled with light filtration, without stabilisation, to allow for the possible formation of natural sediment
