Taste Profile:Intensely fruity on the nose. The aromas are reminiscent of black cherry, wild blackberry and liquorice. A subtle woody character that marries delicately with the other aromas. As the wine evolves, there are more complex notes such as mild spice, nutmeg, leather, mushroom and damp earth. Although present on the palate, tannin is never astringent but blends harmoniously with the natural freshness and velvety texture of the wine

Winemaking Process: Sustainable agriculture, manual harvesting with grape sorting and optimisation through parcel-by-parcel ripeness monitoring. Traditional fermentation for 15 days in stainless steel tanks. No punching (pipeage). Pumping over twice a day until the end of fermentation. Aged for 12 months in Burgundy oak (25% new oak)
