Domaine Bader-Mimeur Saint-Aubin 1er cru “En Remilly” 2022

Chteau de Chassagne-Montrachet dates back to the late Middle Ages. In the 17th century, it belonged to the last Lord of Chassagne, Sieur Clermont Montoison.

In 1919, Charles Mimeur acquired the historic vineyards, and the family continues to manage the estate until today. Today, the winery is run by Nathalie Bernard and Sbastien Fossier, who continue to evolve the estate in a family spirit, focusing on quality excellence both in the vineyards & in the cellar, with a strong ecological awareness

Grape Varietals & Region:100% Chardonnay from Burgundy, France. Sitting on the heights of the Montrachet hill, the premier cru “En Remilly” terroir has a predominantly limestone soil with a sprinkling of pebbles.

Taste Profile:Golden yellow color with brilliant highlights. Superb nose of flowers and white fruit, with hints of cream and vanilla. Beautifully structured and elegant on the palate, with a hint of oak to support the wine. Serve with fish or poultry in sauce

Winemaking Process: Hand-picked grapes only, in crates of up to 30 kg. The whole bunches are pressed in a pneumatic press. The grape juice is then cold-settled before being gravity-filled within 24 hours. Alcoholic fermentation takes place entirely in barrels, using indigenous yeasts. The wine ages in French oak for 10 months, of which 20% are new, undergoing regular stirring of the lees
