Grape Varietals & Region:100% Chardonay from Chablis, Burgundy. This cuve comes from seven parcels of the domaines oldest vines (40-70 years old) in La Chapelle-Vaupelteigne, on steep slopes opposite Fourchaume.
Taste Profile: This is a very serious village wine. The nose is tense and tight, with smoky iodine and oyster-shell notes. Serious and very concentrated on the palate, there are wonderful weight and density in the mouth, with real purity.
Winemaking Process: Fermentation takes place in neutral oak with indigenous yeast. Wines are aged in neutral wood (~10% new oak) on fine lees during 18 months.
