Atrial Rubicite is a barrel-aged wild ale re-fermented with raspberries. Originally released in 2013, it was at the time Jester Kings first-ever fruit beer.
When Atrial Rubicite was first released nine years ago, they wrote, “We love taking fruit that is highly aromatic and flavorful and fermenting it to dryness, so that the beer is imbued with the rich character of the fruit but is devoid of sweetness.” That description still fits Atrial Rubicite to a T. Part of the magic of wild fermentation is that the fruit’s explosive aromatics and deep flavor are preserved, but the sugar and sweetness are all gone.
The process behind Atrial Rubicite is simple but patient. Brew with well water, Texas-grown malted grains, and a blend of fresh and aged hops, then fermented with a mixed culture of brewers yeast and native yeast. Barrel-age for about a year, re-ferment with about seven pounds per gallon of raspberries from Washington, and then naturally condition.
