Demi-Tone (blueberries) is a farmhouse ale in Jester Kings range of beers refermented with fruit, which includes La Vie en Rose (raspberries), Detritivore (cherries), and Grim Harvest (blackberries).
They have come a long way since the first attempt of working with blueberries, and believe Demi-Tone is a really great expression of one of their core philosophies allowing native yeast and bacteria to create interesting flavours and aromas through the fermentation of grains and fruit.
Demi-Tone was made by taking a young (1-2 month old) farmhouse ale that was fermented in Oak Foudre, then adding the blueberries and allowing them to ferment and burst naturally via a process known as carbonic maceration (CO2 pressure forms within the fruit before they naturally burst), a process widely used in wine production. This unlocks a lot of the flavour and aroma, and makes for a really pleasant refermentation. They then let the beer get totally dry, resulting in a mildly tart, and fruit forward flavour, and has a nice woody seedy character with a bit of jaminess in the background, alongside a note of Juniper. Unfiltered, unpasteurized, and 100% naturally conditioned.
