Grape Varietals & Region: 100% Palomino Fino. From a vineyard with over 50 years of mass selection in Miraflores Baja, within the Anduclia region of Spain

Taste Profile:Its salinity and purity are highlighted by fermentation in old, solid steel Champagne tanks. The vineyard emphasizes the salinity of the plot with subtle hydrocarbons and gunpowder, aromas associated with the great albariza plots.

Winemaking Process: Whole grape pressing. Gravity settling. Spontaneous fermentation and vinification carried out in solid enameled steel tanks for 11 months with all its lees. Bottled in July unfiltered.
