Noble Hill Sur Lie Chenin Blanc 2022

Grape Varietals & Region:100% Chenin Blanc from Simonsberg in South Africa. The fruit comes from 2 vineyards, of which one old vine & one planted in 2016, on decomposed granite soils

Taste Profile:The wine opens with aromas of fresh lime blossom, honeydewmelon, and green apple. The aromas are balanced by delicate mineralflavours derived from the rocky slopes of the Simonsberg mountains

Winemaking Process:The fruit is pressed and undergoes spontaneous fermentation on wild yeasts in concrete vats. It is left on fine less for 9 months to develop fullness & depth. A small portion is left on skins in a separate clay amphora, and is blended upon bottling.
