Grape Varietals & Region: 75% Sauvignon Blanc & 25% Semillon from Western Cape, South Africa. Savage White is made up of three vineyard sites grown in a combination ofsandstone and granite soils. Elevation of the sites ranges from 213m to 677mabove sea level with a combination of trellised and bush vine plantings.
Taste Profile:Notes of blackcurrant leaf, pineapple, pear, and grapefruit, complemented bynuanced wood spice. The palate is intricately woven, showcasing distinctive salinity, texture, and impressivelength.
Winemaking Process:The grapes undergo careful sun exposure throughout the season toguarantee the production of ripe fruit. After overnight cooling, we employwhole bunch pressing and oxidative handling. The juice is then moved to avariety of 500L barrels (20% new) and concrete eggs, where spontaneousfermentation and aging occur. Depending on the vintage, malolacticfermentation takes place in the Semillon and occasionally in the Sauvignonblanc. The wines undergo a 12-month aging process in barrel and concrete,followed by an additional 2-3 months in stainless steel before the finalbottling stage.
