The Serbal Malbec is crafted from 20-year-old vines in San Jos, Tupungato, and the Uco Valley, thriving at 4,300 feet in rocky, sandy alluvial soils. After a short cold soak to enhance color and flavor, the wine undergoes fermentation in temperature-controlled stainless steel tanks. Forty percent is aged in second-use barrels, adding texture and softening its structure. Floral aromas and generous fruit flavors are balanced by fresh acidity and a firm, dry finish, making it an excellent companion to poultry, charcuterie, empanadas, and slow-cooked pork shoulder.
