Grape Varietals & Region: 100% Sauvignon Blanc from estate vineyards.

Taste Profile: An elegant mix of citrus flavors like Meyer lemon, key lime, and ruby grapefruit with light notes of wet slate and lanolin, and a subtle finish of gooseberry.

Winemaking Process: Grapes were harvested in batches according tooptimal ripeness, with a portion (11%) being set aside to dry for 64 days in the Appassimento method. The wine was fermented and aged in stainless steel.
