Thehand-picked grapes are pressed immediately to separate the juice from the skin and seeds. Once the juice has settled overnight, its inoculated with yeast and moved to barrels to ferment. After the primary period of fermentation, the barrels are stirred every other week to perfect the wines balance and acidity.
