Tokar Estate Carafe & Tumbler Pinot Noir Shiraz 2020

Taste Profile:This wine is bright ruby and that brightness is mirrored in the sweet perfume of strawberries, orange peal, cocoa and green tea. Its reminiscent of Italian bitters. The medium bodied palate is big in fruit and has an attractive slipperiness in the mouth before the acid and gentle tannins engage leaving the finish dry. There are flavours of rockmelon and cherries with warmed spice and roasted sesame. Its a very moreish wine and the bottle tends to empty quickly. This is one for immediate enjoyment.

Winemaking Process: The fruit was harvested and immediately processed and fermented as several small lots with a combination of wild and inoculated yeasts. The wine has a large amount of whole bunch (around 30%) and it spent 10 months in large, seasoned French oak barrels in our cool underground cellar where it underwent a long slow wild malolactic fermentation. The wine was blended and bottled whilst still bright, fresh and lively.
