Taste Profile: Deep ruby color with a purple tinge showing its youthfulness. The nose smells of classic Yarra Valley Cabernet, with violets, cigar box, vanilla, and red bell peppers lifting from the glass. The palate shows elegance and poise as the dark cherry and black current transition to charred meat, graphite, and tea. The fresh acidity and silky tannins will provide the structure to hold this wine together for 10+ years, but it is so very drinkable right now.
Winemaking Process: The fruit was destemmed, lightly crushed and gravity fed to the fermenters, with a little stalk added for seasoning. Wild yeasts kicked off the ferment and the winemakers combined pump-overs and plunging to mix the must. A long and gentle maceration post-ferment built the wines structure. Maturation and wild malolactic fermentation occurred in 300L French oak barrels.
