Hans and Paula Diwald grew up in the 1960s, both on a farm. In 1972, they took over the business and restructured it. Since 1976, they have become true pioneers by endeavouring something unthinkable: converting to biodynamic farming practices. Back then there was no official certification yet, only a handful of kindred spirits. Paula and Hans used to be on the receiving end of condescending smiles, but today they are considered among the pioneers of a whole movement.
Grape Varietals & Region: This extremely drinkable Riesling hails from a gravelly site and a loess-rich Southern slope. The fruit comes from 2 sites that are vinified separately & blended
Inspired by the German expression which directly translates to where Fox and Rabbit say goodnight, this refers to a remote place, much like Wagram from the general Austrian wine growing region.
Taste Profile:Fuchsentanz is a beautiful composition of cool and warm elements: the gravelly soils lend it citrusy & gunpowder notes whereas the loess contributes apricot aromas. Some years, the wine has a touch of residual sugar, but in principle it is a dry Riesling with high acidity, meant for drinking pleasure.
Winemaking Process: Grape bunches are hand-picked and then pressed whole in order to conserve the lean and delicate character of the wine. Spontaneous fermentation takes place in stainless steel tanks, and the wine is left on the lees until bottling for 6-8 months.
