With records dating back to 1121, Willi Schaefer is a benchmark for the Mosel and the wines are coveted not just by collectors, but by other growers.
Since 2015, Christoph Schaefer and his wife Andrea run this storied family winery in Graach. Their winemaking philosophy is not much different than that of Christophs father or grandfather. The focus is not on numbers or analytics, but on how the grapes taste. From harvesting each plot to the fermentations with natural yeast, all the way through bottling, everything is done by taste and feel.
Grape Varietals & Region: 100% Riesling sourced from Graacher Dompropst, which rises steeply directly above the village of Graach at 120260 metres above sea level. The vineyard got its name because the Trier Cathedral Provost was due one-third of the tithes of wine from Graach. Due to its topography and south-southwest exposure, Domprobst gets plenty of sunlight and is well protected from cold winds and frosts. The warming of the stony, argillaceous slate soils cause a uniform and full ripening of the grapes.
Taste Profile:A Riesling with a serious dose of minerals and yellow stone fruit flavours. Fresh and crisp nose of yellow peach and lemon citrus, white flowers and minerals. Nectarine and apricot stone fruit, honey green apple and ripe pineapple flavours on the palate are complemented by a piercing and deep minerality. Powerful and complex off-dry white with a solid structure and pleasant length on the bitter finish.
Winemaking Process: The grapes are hand-harvested, gently pressed whole cluster, and spontaneously ferment and age in large old Fuder barrels.
