Since 2015, Christoph Schaefer and his wife Andrea run this storied family winery in Graach. Their winemaking philosophy is not much different than that of Christophs father or grandfather. The focus is not on numbers or analytics, but on how the grapes taste. From harvesting each plot to the fermentations with natural yeast, all the way through bottling, everything is done by taste and feel.
Grape Varietals & Region: 100% Riesling. Although Willi Schaeferis not well-known for their dry Rieslings, they are happy to make them when they have the grapes and the right conditions are met. The fruit comes from Willi Schaefer’s Graacher vineyards in Mosel, Germany.
Taste Profile: Willi Schaefer Graacher Riesling Trocken releases aromas of fresh apples, pears and other cool orchard fruits. Clean and light palate with a crispy acidity. The aromas follow through to the mouth, where it meets a slate minerality.
Produced in the large neutral oak barrels, racking a little earlier, kept on the fine lees all the way through to bottling in April.
